Culinary Week in Umbria at the Ristorante Zeppelin in Orvieto, Italy, with Chef Lorenzo Polegri

Spend a week in the beautiful medieval hill town of Orvieto in the Umbrian countryside with Chef Lorenzo Polegri, owner of Zeppelin Ristorante. Here Chef Polegri carries out continuous research in the culinary field. The results of his studies and his adaptations of ancient recipes found in dusty but authoritative books, family manuscripts, and traditional recipes handed down by the country folk of the Orvieto countryside are shared with his national and international guests.

At Zeppelin, students will be introduced to the basic products and procedures used in Italian cooking, and in Umbrian cooking in particular. Chef Polegri will lead the adventurous participants in a guided search for the basic products at the various local markets, wineries, olive oil mills, pasta factories, and vegetable gardens located in Umbria. This course is a full hands-on experience designed for students of culinary arts.

The course also includes the opportunity to explore this beautiful city, tour the Etruscan ruins, visit the famous Duomo (cathedral), explore the countryside and meet the warm, lively local people.

8:30 a.m. - 12:30 p.m. Umbrian Classic Baking and Fresh Pastas (part 1) hands- on class
12:30 p.m. - 1:30 p.m. Wine seminar and tasting with Ennio; Sparkling Wines of Umbria
1:30 p.m. Lunch at Zeppelin with wines
3:30 p.m. “Feel Like the Native”: Tour the Orvieto Underground and the amazing hidden caves and grottos, view astonishing landscape from the Torre del Moro, visit Foresi winery, visit to the old wine cellars and enjoy an aperitif in front of the Duomo.

8:30 a.m. - 1:00 p.m. Workshop at the local pork butcher shop “Salumificio Scianca” in Montecchio and visit and tasting at the Olive Oil Mill Bartolomei operating since 1421.
1:00 p.m. Lunch at Zeppelin with wines
3:30 p.m. Traditional Fresh Pastas (part 2) and Umbrian Pastry hands-on class
Dinner at the Zeppelin with wines

8:30 a.m. - 12:30 p.m. Soups, Sauces with Truffles, Mushrooms, Vegetables, Game. Hands- on class
12:30 p.m. - 1:30 p.m. Wine seminar and tasting with Ennio; Best White Wines of Umbria
1:30 p.m. Lunch at Zeppelin with wines
2:30 p.m. Workshop and cheese tasting at the "Caseificio Alta Tuscia" and workshop at Buffalo farm “Luisa” with tasting.
Visit to Civita, the dying town, with a wine tasting of a local farmer’s wine in an ancient Etruscan olive oil mill.
Dinner in the countryside at Trattoria Peppe in Canonica
